Dark Chocolate Apricot and Nut Bar

This recipe was sent to us by Diet Freedom member Simon, and comes with his warning - "Warning: it's tasty, so limit to a couple of "squares" in the same manner as the choc on its own!!"

Ingredients

  • 1 tbsp brazil nuts, roughly chopped
  • 1 tbsp flaked almonds
  • 1 tbsp pine nuts
  • ½ tbsp pumpkin seeds
  • ½ tbsp sunflower seeds
  • 6 dried apricots, chopped
  • ½ tsp cinnamon
  • 1 bar (120 – 140g) 70% (min) cocoa dark chocolate

Instructions

  1. Gently toast the brazil nuts, flaked almonds, pine nuts, pumpkin seeds and sunflower seeds either in a medium oven or in a dry pan on the hob (be careful not to burn), add a shake of cinnamon and then leave to cool.
  2. Chop the dried apricots.
  3. Line a baking sheet (or similar) with baking paper.
  4. Gently melt a bar of 70% min cocoa dark chocolate.
  5. Add the apricots and about 4 tablespoons of the nuts / seeds mix.
  6. Mix it all up and spread out onto the baking sheet (you need to do this quite quickly before the chocolate starts to set).
  7. Put into the fridge to cool.
  8. About an hour or so later... it's ready!
